Holland America Debuts ‘Morimoto By Sea’ Sushi Bar on Five Ships

Holland America Line is introducing a dedicated Morimoto By Sea sushi bar on five ships, featuring a menu by Global Fresh Fish Ambassador Chef Masaharu Morimoto.

The expansion builds on the existing Morimoto By Sea pop-up and the stand-alone restaurant aboard the Nieuw Amsterdam.

The sushi bar will seat 12 guests, with additional table seating on the Rotterdam, Koningsdam and Nieuw Statendam, while the Eurodam will feature a sushi counter with surrounding seating. The Nieuw Amsterdam introduced the concept in 2023, while the rollout on other ships will take place from March to June 2025. Guests with existing bookings can make pre-cruise reservations.

“With Chef Morimoto’s knowledge and expertise in the sushi world, it made sense for him to expand beyond his Morimoto By Sea restaurant and develop a specialized sushi bar featuring his signature style and flavors,” said Michael Stendebach, vice president of food, beverage and rooms division for Holland America Line. “We’re excited to extend our fresh fish options and give our guests access to another specialty venue with cuisine by such a renowned chef.”

 Items on the Morimoto By Sea sushi bar menu, available beginning in March 2025, include:

Appetizers

  • Toro Tartare – Wasabi, nori paste, sour cream, chives

 

Sushi & Sashimi

  • Chef’s Combination – Sushi and sashimi selection
  • Nigiri & Sashimi – Seasonal white fish, maguro tuna, sake salmon, hamachi yellowtail, kampachi amberjack, unagi freshwater eel, hotate scallop, ebi shrimp, tako octopus, ikura salmon roe, otoro fatty tuna, chutoro medium fatty tuna

 

Chef’s Signature Rolls

  • Shrimp Tempura – California roll, tempura shrimp, gochujang aioli
  • Lobster Tempura – Tempura lobster, avocado, romaine lettuce, tobiko, cucumber, scallion
  • Tako Yaki – Tempura octopus, cabbage, tonkatsu sauce, mayo, bonito flakes
  • Aburi Salmon – Salmon avocado roll, spicy mayo, torched
  • California – Snow crab, cucumber, avocado
  • Spicy Tuna – Tuna, scallion, spicy sauce
  • Spicy Salmon – Salmon, scallion, spicy sauce

  • Tuna Pizza – Anchovy aioli, kalamata olives, red onion, jalapeño
  • Sticky Ribs – Hoisin sweet chili sauce, cilantro
