Hurtigruten has appointed Máret Rávdná Buljo as its new culinary ambassador, reinforcing its commitment to Sami culinary traditions.
A reindeer herder and advocate for Sami culture, Buljo will help showcase the connection between Sami heritage, nature and food.
“I feel a responsibility to bring Sami stories to the table. Through food, I want to convey respect for nature and animals and show how our culture has a spiritual and profound connection to what we eat. It’s about more than just flavors – it’s about soul, heritage, and connection,” said Buljo.
Hurtigruten launched its Culinary Ambassador program in March 2022 with chefs Halvar Ellingsen and Astrid Nässlander. Culinary Ambassadors create menus, work with local producers and promote authentic, sustainable cuisine. The program is part of Norway’s Coastal Kitchen, which highlights Norwegian culinary traditions using local and seasonal ingredients.
As part of the collaboration, Buljo will create menus and dishes that combine traditional ingredients with modern techniques. The dishes will highlight Sami culture and its history and significance, including the role of reindeer meat in Sami society and the use of Arctic berries and plants.
Øistein Nilsen, culinary director at Hurtigruten, said: “We are incredibly proud to have Máret Rávdná Buljo as our Culinary Ambassador. Her expertise and strong commitment to Sami culinary culture and sustainability are a perfect match for us. Together, we will create dining experiences that not only taste amazing but also communicate the essential values and stories behind them.”
Hurtigruten collaborates with over 50 local suppliers along the Norwegian coast. The new dishes use locally sourced ingredients, supporting sustainability and coastal communities. The company also launched a zero-edible food waste initiative nearly a year ago.
“Hurtigruten has always been a bridge between coastal communities and travelers from around the world. Through our collaboration with Máret, we are strengthening our commitment to authentic, sustainable culinary experiences. Sami culinary traditions are an essential part of Norwegian culture, and we are proud to share this heritage with our guests,” said Hedda Felin, CEO of Hurtigruten.
