Atlas Ocean Voyages is introducing a new, open-air dining concept, Alma Alfresco, on its two, expedition yachts.
“Alma means soul in Portuguese and our new venue showcases the gastronomic soul of Portugal,” said James Rodriguez, Atlas Ocean Voyages’ president and CEO.
“In addition to learning about Continental cuisine from curated chefs on our Epicurean Expeditions, Alma Alfresco will offer guests an introduction to Portuguese culinary traditions.”
The new dining experience includes a complimentary wine-pairing menu that which allows guests to enjoy an authentic Portuguese dining experience, to honor the line’s heritage. The menu includes recipes passed down for generations and cooked using artisanal methods, cookware and ingredients.
Highlighted options may include Polvo à Lagareiro, which is oven-roasted octopus and potatoes in a bath of olive oil and roasted garlic, coming from Santa Luzia; Alheira de Mirandela, a traditional Portuguese sausage with radish greens and potatoes, coming from Mirandela; and Torta de Azeitão, a rolled sponge cake filled with egg custard cream, coming from Setúbal.
Atlas’ Epicurean Expeditions will also include features such as a Visiting Vintner, who will conduct a regional wine tasting of regional wines and a Gastronomic Guest, who might be a chef from a Michelin-starred venue or a local culinary star. The guest will also participate in Yachtsman Cookoff, a culinary competition.
Another Atlas’ complimentary dining concept is the Josper Grill Dining Experience located by the pool and featuring a unique shipboard cooking style called “Jospering”, which originated in Spain in 1969.
