Apollo Ship Chandlers has announced new culinary talent for the American Queen Steamboat Company.

Joining the operation as Culinary Director is Bernard Cuillier, who brings more than 35 years of experience in world cuisines. Bernie’s stated goal is “To make each item we serve, and each service we provide, an enriching part of our guests’ experience.” Born in North Africa and raised in France, Bernie apprenticed at major international hotels and restaurants in Europe, before working in Africa, the Middle East, Indonesia, Eastern Europe, and South America. He has a degree in food service, and a diploma of hotel and restaurant management, as well as being a World Master Chef, certified by the World Master Chef Society in London, England. In 2007, Bernie opened the award winning Bistro des Amis restaurant in Houston, Texas. 

Joining the operation as Executive Chef is Kevin Oakes, an accomplished American culinarian, who brings 30 years of Executive Chef experience to the American Queen brand. Kevin was educated at the Culinary Institute of America in New York, and his resume includes 8 years at ‘The Ridge Tahoe’ in Lake Tahoe, Nevada, and 10 years at ‘The Bellagio’ in Las Vegas. He has appeared on the BBC Food Network, and has been featured as Guest Chef at many prestigious events, including twice at the James Beard Awards dinner.
